apple Fritters

Hello friends!! This past weekend I went apple picking as y’all probably could tell by my apple pie filling recipe 😉 All I could think about when I was picking all those apples was these would make amazing apple fritters!! I’ve always been really daunted by making food with yeast, but friends when I tell you that these are simple I MEAN it. I promise. I wouldn’t be making them otherwise. They’re also a bit too easy to eat haha! Hope y’all enjoy 🙂 This recipe makes about 20 small-medium apple fritters!

Ingredients:

  • 3/4 cup milk (2% or whole milk or any non-dairy milk would work best)
  • 1 tspn yeast
  • 1 tbsp sugar
  • 1 2/3 cup all-purpose flour
  • 1 tbsp melted butter or ghee
  • 4 cups of vegetable oil for frying
  • 1 cup additional all-purpose flour to roll out the donuts
  • 1- 1.5 cup apple pie filling (canned or you can use the recipe on my blog!)
  • 2 cups confectioners (or powdered) sugar
  • 1/2 tspn vanilla extract
  • 4 tbspns milk (2% or whole milk or any non-dairy milk would work best)
  • 1 tbsp maple syrup

Directions:

  1. Warm milk for 25 seconds in the microwave (make sure milk is warm not hot otherwise the yeast will die).
  2. Add in sugar and yeast to the warmed milk. Stir to combine and let the mixture sit for 10 minutes to activate or bloom the yeast.
  3. Mix the flour and yeast mixture together.
  4. Knead the dough until it is well combined.
  5. Knead the butter or ghee in until the dough is well combined and in a ball form.
  6. Let the dough rest covered for 1.5 hour in a warm place. (I kept my dough outside in the sun 🙂 ). The dough should be doubled in size.
  7. Once the dough has doubled in size, we are ready to go! Heat your vegetable oil in a fryer or a medium sized sauce pan on a medium flame.
  8. Generously flour the area where you will roll out the dough. Take out the dough from the bowl and roll it out to about an 8×8 shape (any shape works!).
  9. Once the dough has been rolled out. Take the apple pie filling and slather it onto the rolled out dough. (I was able to get 1.5 cups into the dough because I love apples however, feel free to cut back to 1 cup).
  10. Fold the dough back up so that the apples are incorporated into the dough (kind of like a calzone).
  11. Roll the “calzone” back out. Essentially this step is to make sure that the apples are well incorporated into the dough, if rolling and re-folding is not your thing feel free to mix the apples into your dough and fry these using a tablespoon to measure out the fritters. Cut the dough into 2×2 squares.
  12. These bad boys are ready to be fried! Make sure the oil is heated to 370 degrees Fahrenheit. Another quick test is to drop a little bit of dough into the fryer and if the dough floats to top the oil is ready. Fry up the fritters!
  13. Next up we will be making the icing (which is super easy). Just whisk together the powdered/confectioner’s sugar, vanilla extract, milk, and maple syrup.
  14. By this time the fritters should be cool enough to touch! Generously coat the fritters in the icing. I usually have the icing in a bowl and dunk the fritters in 1 by 1.
  15. Let the fritters rest for a couple more minutes (till the icing has set).
  16. Finally enjoy the amazing apple fritters you just made. Yes YOU just made apple fritters. 😉

APPLE Pie FILLING

Hello friends!! This past weekend I went apple picking because tis’ the season 🙂 All I could think about when I was picking all those apples was all that I could make with them. I was thinking apple pie pizza (similar to the Cici’s one I used to LOVE growing up), apple crumble (ala mode of course), and I was thinking about APPLE FRITTERS (recipe on blog!). And with all of these I realized I’d need some apple pie filling. So I present to you the BEST apple pie filling (I’ve ever made 😉 ). Hope y’all enjoy ala mode of course!

Ingredients: (Makes about 4 cups of filling)

  • 3/4 cup room temperature butter
  • 2/3 cup brown sugar
  • 1/2 cup regular sugar
  • 1/4 cup maple syrup
  • 1/4 cup apple butter
  • 1/2 cup whole milk
  • 1/4 tspn cinnamon
  • 1/4 tspn pumpkin pie spice (I used my homemade chai masala)
  • 1 tspn vanilla extract
  • 2 tbspns cornstarch
  • 6 cups cut apples (about 5-6 medium to small apples)

Directions:

  1. Melt the butter and sugars (brown and regular) in a saucepan on medium heat.
  2. Once the sugar has melted. Add in the maple syrup, apple butter, and whole milk. Stir together to ensure that it’s a homogeneous mixture. This takes a few minutes on medium heat. Remember to stir frequently so that the mixture doesn’t burn.
  3. Once the mixture has come to a boil and emulsified together add in the cinnamon, pumpkin pie spice, and vanilla extract. Stir to combine.
  4. Add in the cornstarch and whisk to ensure there are no clumps and that the mixture is a nice silky liquid.
  5. Add in the cut apples to the mixture.
  6. Let the mixture cook down on low-medium heat for 30-40 minutes (with a top on the sauce pan) stirring every few minutes to ensure the mixture doesn’t stick to the bottom of the pan. Alternatively, you can pour the mixture into a crock-pot and let the mixture cook for 1.5- 2 hours on low heat (stirring occasionally to ensure no burning).
  7. Let the mixture cool to room temperature and enjoy!

Vegan Chai-Spiced Apple Muffins

Hello dear friends! Today I realized that I had too many apples and I was craving a cup of chai. I’m sure y’all can tell where my mind went to next! Apple CHAI muffins of course! I tried to make these little suckers as healthy as possible because Y’ALL summer is around the corner. These muffins are healthy(ish), beautifully spiced, and VEGAN. Plus you get the added bonus of being able to say you ate a fruit today. All you gotta do now is mix all the ingredients together and pop these bad boys in the oven. GO CHECK ‘EM OUT!

PS: I’ve included the recipe for chai masala below that I was “loaned” from my favorite aunty in the world. She wishes not to be named but she is amazing and y’all should definitely try her recipe out!!

Muffin Ingredients:

  • 1 cup whole wheat flour
  • 2/3 cup sugar
  • 1/2 teaspoon chai masala (recipe below)
  • 1/4 teaspoon cinnamon
  • 1 teaspoon baking soda
  • pinch of salt
  • 1/3 cup neutral oil
  • 2 medium apples shredded (I used GALA)
  • 1/2 cup almond milk
  • 1/2 teaspoon vanilla
  • 2 tablespoons chia seeds (optional and can be substituted for any nuts/seeds/dried fruits of your choice)

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Shred the apples.
  3. Combine the flour, sugar, chai masala, cinnamon, baking soda, pinch of salt and mix until well incorporated.
  4. Add the oil, almond milk, and vanilla and stir until well combined.
  5. Add the shredded apples and chia seeds (optional) and mix well.
  6. Pour into a well-greased baking sheet or muffin tin. Makes about 1 dozen muffins.
  7. Bake at 350 degrees Fahrenheit for 25 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Rest for 15 minutes and enjoy!

Aunty’s Chai Masala Recipe

Chai masala is a seasoning blend that is used to make Indian chai along with black tea leaves, milk, and sugar. Many people have their own recipes and ratios however, this one is our favorite and makes about 2 tablespoon of the chai masala!

Ingredients:

  • 2 teaspoons cardamom
  • 2 teaspoons cinnamon
  • 1 teaspoon black pepper seed
  • 1 teaspoon ginger powder
  • pinch of cloves
  • pinch of nutmeg

Directions:

  1. Stir all of the spices together to combine well!
  2. Store in an airtight container.
